Ingredients for: 2 servings
|1||teaspoon||pepper from the grinder|
- For the avocado soup first dissolve the flesh on the avocado and drizzle in a jar of lemon juice. Wash the spinach and cut into small pieces. Puree both with the soup in the hand blender. Season with salt and pepper.
- Arrange the cold soup in bowls. Wash the tomato, finely chop and garnish the soup with it.
Be sure to use fresh spinach for this recipe.
