|400 g||frozen forest berries|
|200 g||whipped cream|
|200 g||yogurt (mild)|
|1 packet||vanilla sugar|
- Thaw berries. Set aside some beautiful berries for decoration. Puree half of the remaining berries or pass through a fine sieve.
- Whip the cream. Separate eggs. Beat the egg yolk with the sugar over a hot water bath until frothy.
- Allow to cool slightly, then stir in yogurt. 3 tablespoons pureed berries, cream and the whole berries under the cream and spread the mass on 4 small silicone molds. Put in the freezer for 2 to 3 hours.
- Mix the remaining fruit puree with the vanilla sugar. Carefully remove the parfaits from the silicone molds, drizzle with the fruit puree and garnish with the berries set aside.
