Lactose-free Yogurt Parfait with Berries

Lactose-free Yogurt

400 g frozen forest berries
200 g whipped cream
2 eggs
75 g sugar
200 g yogurt (mild)
1 packet vanilla sugar


  1. Thaw berries. Set aside some beautiful berries for decoration. Puree half of the remaining berries or pass through a fine sieve.
  2. Whip the cream. Separate eggs. Beat the egg yolk with the sugar over a hot water bath until frothy. 
  3. Allow to cool slightly, then stir in yogurt. 3 tablespoons pureed berries, cream and the whole berries under the cream and spread the mass on 4 small silicone molds. Put in the freezer for 2 to 3 hours.
  4. Mix the remaining fruit puree with the vanilla sugar. Carefully remove the parfaits from the silicone molds, drizzle with the fruit puree and garnish with the berries set aside.
