Leek Soup For any Occasion

After the Christmas it is time to detoxify, to match the delicious detox – recipes, such as this leek soup.

Cooking time: 15 min. 
Ingredients for: 2 servings


250 g potato
200 g leek
1 sprinkle olive oil
500 ml vegetable broth
1 piece Bay leaf
1 teaspoon salt
1 teaspoon pepper


  1. For the leek soup, first wash the leek and finely chop it, peel the potato and chop it into small pieces.
  2. Briefly fry the vegetables in a saucepan with a little oil and pour in the soup. Add the bay leaf and simmer for 15 minutes.
  3. Then remove the bay leaf and set aside half of the potato cubes. Then puree the soup with the hand blender. Season with salt and pepper and add the potatoes again.

You can still garnish the soup with fresh herbs.
