- For the potato with ricotta, first cook the potato in a saucepan with water until soft. Then peel.
- In the meantime, clean the radishes and cut small. Wash arugula and finely chop. Mix both in a bowl with ricotta and skim milk.
- Season with salt and pepper and serve with the hot potato.
In spring, instead of arugula, they use fresh wild garlic.
