Vegetable Salad

Ingredients for: 2 servings


1 piece Paprika (yellow)
1 piece carrots
1 piece zucchini
1 piece Red beet
2 piece potato
1 tablespoon olive oil
1 pinch salt
1 pinch pepper
2 tablespoon Orange (juice)
2 tablespoon vegetable soup
2 tablespoon Parsley (chopped)


  1. For the vegetable salad, first preheat the oven to 250 degrees’ top / bottom heat and lay out a baking sheet with parchment paper.
  2. Wash the peppers, carrots and courgettes, clean and cut into thin strips. Peel potatoes and turnip and cut into thin slices.
  3. Mix the vegetables with olive oil, salt and pepper and spread on the baking tray. Fry for about 20 minutes in the oven, turning frequently.
  4. Mix soup, parsley and orange juice and pour over the finished vegetables. Mix the salad and let it cool a bit.

Of course you can also use other vegetables for this recipe.
