- For the vegetable salad, first preheat the oven to 250 degrees’ top / bottom heat and lay out a baking sheet with parchment paper.
- Wash the peppers, carrots and courgettes, clean and cut into thin strips. Peel potatoes and turnip and cut into thin slices.
- Mix the vegetables with olive oil, salt and pepper and spread on the baking tray. Fry for about 20 minutes in the oven, turning frequently.
- Mix soup, parsley and orange juice and pour over the finished vegetables. Mix the salad and let it cool a bit.
